What You’ll Need:

10 minutes prep | 20 minutes cook

Makes 11 Servings

1.5lb ground turkey

2 cups shredded mozzarella cheese

1 egg

1 Tbsp butter melted

2 cups almond flour

2 tsp Italian seasoning

1 tsp garlic

1 tsp salt

3 tsp baking soda

1/2 tsp oregano

1/2 tsp parsley

1/2 tsp thyme

1/4 tsp sage

1/4 tsp basil

1/4 tsp pepper

Directions:

  1. Preheat oven to 375F. Prepare a cookie sheet with parchment paper or foil.

  2. Melt butter in a large bowl.

  3. In another bowl, combine almond flour, all seasonings, salt and baking soda.

  4. Once the butter is melted, combine the ground turkey, egg and cheese with the butter in the large bowl.

  5. Add the dry ingredients to the large bowl and combine well.

  6. Roll into approx 1” diameter balls and Place on prepared cookie sheet. Should make approx 44 meatballs.

  7. Bake in preheated oven for 20 minutes or until browned.

You can eat these on their own with a roasted side veggie or they pair well with marinara and/or brown rice, quinoa or couscous.
